Our honey is pure, raw, unfiltered and never heated. We simply remove the wax the bees use to seal the ripe honey and use centrifugal force to remove the honey from the combs. We drain the honey through a course sieve to remove wax particles and bee parts. We allow the honey to settle for two to three days and then bottle the honey. Because our honey is never heated, it will crystallize in time. The honey can be re-liquidfied by simply gently heating in a warm water bath. Pure honey never goes bad.
Spring Honey
Spring brings the first nectar flow of the year where the holly, tulip poplar, black berries, and black locusts are in bloom. The honey bees create a lovely light amber honey that has a wonderful floral aroma.
Summer Honey
Summer brings a different kind of honey which is a mixture of clover, sunflowers and other plants that flower in the summer. This is a grainier honey which tends to crystallize more readily. It is the perfect honey for turning into our delicious creamed honey.
Fall Honey
Fall brings on the asters and other fall flowers. This creates yet another honey which the bees use to feed themselves during the winter. We harvest this honey carefully, making sure the hives are well stocked for the winter.
Comb Honey
Comb honey is a delicacy that the bees create. The beekeeper must provide pure wax foundation and the bees then create the perfect comb which can be harvested and cut into sections. The conditions have to be just right or the bees will not expend the extra energy to create comb wax and will simply store honey elsewhere in the hive.
Creamed Honey
Creamed Honey is pure raw honey that has been forced to crystalize as very small crystals. All honey will crystalize in time. By controlling the crystallization process, the creamed honey is smooth on the palette and perfect for spreading on toast or crackers.
